Asian Lettuce Cups Recipe

Makes about 10 Lettuce Cups (5 servings)
1 Head, Butter Lettuce
1 LB Grass Fed Ground beef (or turkey/protein of choice)
1 Cup, Liquid Coconut Aminos
1 Cup, Green Cabbage, Shredded
1 Cup, Purple Cabbage, Shredded
1 Cup, Thin sliced carrots
1 Cup, Chopped Mushrooms
½ Sweet Onion, Finely chopped
½ Cup Water Chestnuts
2 Tablespoons, Pickled Ginger
Handful, Radish Sprouts
1 ½ Tablespoons, Garlic
1 Tablespoon, Sesame Seeds
Salt to taste
¼ Cup, Green Onion
2 Tablespoons, Olive oil
In a mixing bowl, add ground beef, salt, chopped onions, and garlic. Mix together.
Add ground beef mixture to large skillet over medium heat. Cover and cook until beef is almost fully cooked (slightly pink).
Add liquid coconut aminos. Reduce head to low and cover. Continue to cook until liquid is almost fully evaporated (approx. 15 minutes).
In a separate skillet, add green and purple cabbage, mushrooms, carrots, and water chestnuts to pre-heated olive oil. Cook over medium-low heat until veggies begin to caramelize (approx. 10 minutes).
Wash lettuce and pat dry with paper towel. Plate lettuce, using two leaves to make a cup for more stability.
Remove food from the stovetop and approx. ¼ - ½ cup of ground beef mixture, ¼ cup of veggie mix to each lettuce cup.
Top with sesame seeds, radish sprouts, pickled ginger, green onion, and cashews (you can crush them up if desired).
Serve immediately and enjoy!
