Avocado Tuna Tower

Avocado Tuna Tower Recipe

Ingredients

  • 1 can, fresh tuna

  • 1 ripe avocado

For the mayo:

  • 1 Egg

  • ½ Cup, Light Olive Oil (divided in half)

  • 1/2 lemon, juiced

  • 1 Teaspoon, minced garlic

  • 1 teaspoon, mustard powder

  • 1 tablespoon, sugar-free hot sauce (optional)

  • Salt, to taste

Toppings/Sauces:

  • Coconut Aminos

  • Sesame Seeds for garnish (optional)

  • Pickled ginger and/or sushi ginger

Other:

  • Food Processor or blender

  • Tube-like container (I used a large measuring cup, you could try a mason jar, etc.)

Directions

For the mayo:

  1. Place all ingredients (only half of olive oil) in blender or food processor.

  2. Blend until ingredients begin to combine then change speed to low and drizzle second half of olive oil serving into blender/food processor and continue to blend until combined.

Other:

  1. Cut avocado in ½, remove pit and peel off skin completely.

  2. Dice into ¼ inch pieces.

  3. Remove tuna from can, draining all the liquid and combine with mayonnaise. Stir until mayonnaise fully coats tuna and you are left with tuna-salad.

  4. Using a tube-shaped container (try measuring cup, mason jar, soup can, etc.) build your tower starting with the tuna salad. Press down firmly then add avocado.

  5. Turn container over and place on plate gently lifting it up so you are left with your tower.

  6. Serve chilled with coconut aminos, garnish with sesame seeds, pickled/sushi ginger and enjoy!
