breakfast pizza recipe

TOTAL TIME: 35 MINUTES
MAKES 3-4 SERVINGS
2 CUPS, SHREDDED SWEET POTATO
10 EGGS, SEPARATED INTO 6 FOR CRUST, 4 FOR TOPPING
1/4 CUP, COCONUT FLOUR
1/2 CUP, ALMOND FLOUR
4 LINKS, APPLEGATE FARMS CHICKEN SAUSAGE
EVERYTHING BUT THE BAGEL SEASONING TO TASTE
CILANTRO TO TASTE
OREGANO TO TASTE
salt and pepper to taste
1 AVOCADO, SLICED
ANY OTHER TOPPINGS DESIRED
preheat oven to 425 degrees farneight.
in a large mixing bowl, combine shredded sweet potato, 6 eggs, coconut flour, almond flour, salt and pepper. mix until combined and all ingredients hold together.
Press onto parchment paper lined baking sheet in a circular pizza-like shape.
Bake for 10-12 minutes.
While crust is baking, slice chicken sausage, avocado and chop cilantro finely.
Remove crust from oven, line the edges with chicken sausage, crack 4 (or more if you wish) eggs on top allowing them to run and fill up the center of pizza. Season with Everything But the Bagel seasoning. Top with remaining chicken sausage, chopped cilantro and oregano.
Bake for 7-10 minutes.
Remove from oven and top with sliced avocado.
Serve hot or cold, store in air-tight container in refrigerator and enjoy!
