Chili Lime Chicken

You guys, my fridge is broken!! You know that super sad emoji? Yeah, insert that here please.

My freezer is acting as my fridge temporarily so all that good produce I bought doesn’t go to waste.  The only issue is that randomly in the middle of the night, the freezer side will start working as normal again… so my lunch for the next day turns into ice. Why is adulting so hard? Or better yet, why is life so expensive?!? On the bright side, new fridge shopping is kind of fun. You know those refrigerators with the pull our drawer at the bottom? I have my heart set on one of those! I actually feel like they might be a pain though since you have to pile things on top of each other but they give you more fridge space and I’m all about dat life!

Once we realized the fridge was broken, we decided to have ourselves a grilling party to save the meat! We got this awesome new grill from a yard-sale for $20. Such a steal! And no, there’s nothing wrong with it.  Good stuff! One of the best parts about grilling to me is how quickly things cook and how little work is required. Not having to clean pans is pretty rad too.

One of my favorite things I’ve made so far is chili lime chicken thighs. If you’re a Trader Joe’s fan, you may have tried their Chile Lime seasoning before and man that stuff is good! So, I used their seasoning as inspiration and made my own rub… DE-LISH!

You can use this rub on a variety of things which makes it all the better. Hope you enjoy it!

Chili Lime Chicken Recipe

  • Prep Time: 5 minutes

  • Cook Time: 20 minutes

  • Total Time: 25 minutes

  • Makes approximately 3 servings

Ingredients

For the rub:

  • 2 Tablespoons chili powder

  • 1 teaspoon ground cumin powder

  • 1 teaspoon cayenne pepper powder

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • pinch on paprika

  • zest of 1 lime

  • 1/2 teaspoon salt

Other:

  • 1 pound boneless chicken thighs

  • 2 tablespoons olive oil

Directions

  • pre-heat grill to 400 degrees FAHRENHEIT and line with tin foil

  • rinse chicken thighs under cold running water, pat dry with paper towel and place on a cutting board or mixing bowl

  • brush chicken with olive oil, coating evenly on both sides

  • in a separate bowl, pour in all powdered seasonings, including salt, for the rub

  • grate the lime zest into the bowl of seasonings and mix together until blended

  • using hands, rub the mixture onto each piece of chicken, coating evenly and generously on both sides

  • Place chicken on the tin foil lined part of the grill an cook for approximately 7-8 minutes per side, or until all the way cooked through

  • remove chicken from tin foil and place directly on grill for about 5 minutes, or until desired blackening achieved

  • Serve hot or refrigerate for up to two days

  • enjoy!
