Who else is curled up on the couch watching football... or catching up on trashy TV (let's be real). Well, I have the perfect cuddle-buddy for you: Paleo Chili Con Carde. I know you all are probably like damn, Carrie, getting fancy with the lingo! But TBH, I just googled chili to see if it had one "L" or two and saw chili con carde pop up and I was like "BAM! Love it!" Just keeping it real, it's what I'm best at.

Regardless of your Sunday plans, or whenever you happen to stumble upon this recipe, this hearty comfort-food dish is perfect for any occasion. Oh, and WHOLE30-ers rejoice, this meal is totally compliant, WOOT WOOT!

Paleo Chili con carde RECIPE

  • Prep Time: 10 Mins

  • Cook Time: 25 Mins

  • Total Time: 35 Mins

  • Makes 5-6 Servings

Ingredients:

  • 1 lb., Grass Fed Ground Beef

  • 1 can, tomato paste (sugar free)

  • 1 can, peeled and diced tomatoes (sugar free)

  • ½ cup, Heirloom tomatoes, Chopped into small pieces

  • 1 Sweet Onion, Diced

  • 1 Shallot, Diced

  • 1 Squash, Chopped into small pieces

  • 1 Zucchini, Chopped into small pieces

  • 1 Carrot, Chopped into small pieces

  • 1 Stalk of Celery, Chopped into small pieces

  • 2 Tablespoons, Minced Garlic

  • 1 Tablespoon, Chili Powder

  • 1 Tablespoon, Fresh Parsley

  • 1 Tablespoon, Oregano

  • ½ Tablespoon, Salt

  • ½ Tablespoon, Pepper

  • 2 Tablespoons, Olive Oil (or whatever cooking oil you prefer)

Toppings:

  • Paleo coconut crema (sour Cream) - see recipe below

  • Sugar-Free bacon bits

  • Jalapeños, sliced

Directions:

  1. In a large skillet, heat olive oil over medium-low heat. Add onions, shallots, squash, zucchini, carrot and celery. Cover and let all ingredients cook down until caramelized (about 15 mins), stirring occasionally.

  2. While vegetables are cooking, add ground beef, garlic, chili powder, parsley, oregano, salt and pepper to mixing bowl. Mix all ingredients together until fully blended.

  3. In a separate skillet, add ingredients from mixing bowl and cook over medium-low heat, stirring occasionally.

  4. Once ground beef is almost fully cooked (about 8 mins), add tomato paste and dice diced tomatoes from can. Continue to cook another 5-7 mins.

  5. Pour vegetables from other skillet into ground beef mixture and add heirloom tomatoes. Stir to blend and continue cooking for another 3-5 mins.

  6. Scoop into bowl and top with paleo sour cream, bacon and jalapeños.

  7. Serve warm and enjoy!

 

Paleo coconut Crema (Sour Cream) recipe

  • Prep Time: 24 hours (for chilling), 1 minute active

  • Cook Time: 1 minute

  • Total Time: 2 minutes active

  • Makes 8-10 servings

Ingredients:

  • 1 can full fat coconut milk

  • ¼ teaspoon apple cider vinegar

  • 1 teaspoon salt

Directions:

  1. Chill coconut milk in refrigerator overnight to allow thickening (in can).

  2. Once chilled and thickened, drain liquid from can leaving just the thick cream.

  3. Place all ingredients in blender or food processor and blend on high-speed until combined.

  4. Chill in refrigerator.
