Cilantro Lime Sticky Cauliflower Rice Recipe

Makes 3-4 Servings
1 Bag, Frozen cauliflower rice
¼ cup, Fresh Chopped Cilantro
1 Lime, Juiced
1 Tablespoon, Finely Chopped Ginger
1 Tablespoon, Minced Garlic
1 Can, Coconut Milk (full fat)
Salt to taste
Finely chop cilantro, ginger and garlic.
Add frozen cauliflower rice to large skillet over medium-low heat. Cover and let steam for 3-5 minutes (until slightly softened).
Add cilantro, lime juice, ginger, garlic, and salt. Cover and continue steaming for 2-3 minutes.
Add coconut milk (including the fat), to the cauliflower rice and continue to simmer with lid on for until most of the liquid has cooked down (approx. 10 minutes). You should be left with “sticky” texture.
Serve warm and enjoy!
