Hey Guys!

The sun is back out today, woo-hoo! As I get older, I wonder how I grew up my entire life in this cold climate. My body is NOT meant for it. I am always freezing and I hate how early the sun goes down in the winter, not to mention shoveling (sigh). Just all things winter + me = NOPE! Spring has been playing with my emotions this year guys. One day it’s 80 degree and sunny, the next day it’s 40 degrees and raining. Not cool Mother Nature, not cool at all! So on a day like today, when the sun is out, there’s the perfect amount of breeze and it’s warm enough to not wear a jacket, I’m on cloud nine.

I am also one week into my third Whole30 and trying so hard to stay away from all the loopholes that come with potatoes, nut-butters, dates, etc. All of these things that are good for us, yet can be turned into junk and easily abused when you’re trying to detox yourself of some bad habits.

Let’s face it, I still make the occasional (ok maybe weekly) French “fry” batch, and I still eat a Lara Bar on a crazy-busy day when I didn’t plan-ahead well enough, BUT for this round of Whole30 I promised myself I would rely less on the healthy-indulgences and more on real, whole, substantial meals.

I feel like cauliflower may have some magic powers. You can make so many things out of this one vegetable! It can impersonate buffalo chicken, pizza crust, rice and mashed potatoes. Last Thanksgiving, I made cauliflower-mash as a side dish and I kid you not, everyone thought it was mashed potatoes! They hold the same texture and flavor and a fraction of the fat, calories and carbohydrates.

You can make this recipe a few different ways - creamier with a food processor, or more like the texture of traditional mashed potatoes by simply using a whisk. You can also add in a bunch of different seasonings to make it your own. I’ve done a garlic cauliflower-mash a few times and it’s a crowd pleaser. creamy dreamy cauliflower-mash recipe

  • Prep Time: 5 minutes

  • Cook Time: 20 minutes

  • Total Time: 25 minutes

  • Makes 3-4 servings

Ingredients

  • 1 head of cauliflower (or 1 bag of cauliflower florets)

  • 1/4 cup unsweetened non-dairy milk (coconut milk)

  • 2 tablespoons ghee or clarified butter

  • Salt and pepper to taste

  • ½ tablespoon garlic powder (optional)

Directions

  1. Chop cauliflower into florets leaving as little of the stem as possible.

  2. Fill a large pot with water about 1/3 of the way and place steamer basket inside.

  3. Place cauliflower florets in the steamer basket and put on burner on high heat, bringing water to a boil.

  4. Allow cauliflower to steam until soft enough to mash with a fork (approximately 20 minutes).

  5. Remove steamer basket with cauliflower from heat.

 

For creamy cauliflower puree:

  1. Pour cauliflower in food processor and add milk*, ghee, salt and pepper and garlic powder (optional).

  2. *Note: the cauliflower will produce water, add just a splash of milk at first to test out the consistency, if not too watery, continue to add milk until desired consistency is reached.

  3. Turn on food processor and blend all ingredients together until smooth.

 

For lumpy “traditional” texture:

  1. Pour water out of pot and dump cauliflower into the empty pot.

  2. Add milk*, ghee, salt and pepper and garlic powder (optional).

  3. *Note: the cauliflower will produce water, add just a splash of milk at first to test out the consistency, if not too watery, continue to add milk until desired consistency is reached.

  4. Whisk ingredients together until blended.

 

Garnish with chives (optional) and pair with your favorite main course.

Serve warm and enjoy!
