  • 1 QT, Organic Chicken Stock

  • 1 Can, Full Fat Coconut Milk

  • 3 Cups, Zucchini Noodles

  • 1 lb, Thinly Sliced Grilled Chicken Breast

  • 1 Head, Bok Choy, Pulled Apart

  • 1 Lime, Juiced

  • 1.5 Cup, Shredded Purple Cabbage

  • 2 Hardboiled Eggs

  • Everything But the Bagel Seasoning (to taste)

  • Salt and Pepper (to taste)

  • Paprika (to taste)

  • Chili Powder (to taste)

  • Oregano Seasoning (to taste)

  • 2 Heaping Tablespoons, Minced Garlic

  • Diced Chives and Cilantro (for garnish)


  1. Combine chicken stock and coconut milk in large pot until boiling

  2. Add all other ingredients - including eggs (cook eggs 4-7 minutes depending on how cooked you want your yolk)

  3. Remove eggs from pot and place in ice water, remove shell and slice in half, top with Everything But the Bagel Seasoning and set aside

  4. Continue to cook all ingredients for approximately 20 minutes (or until noodles are no longer firm)

  5. Garnish with chives, cilantro and egg.

  6. Enjoy hot OR cold! For cold, let ingredients cool at room temperature then place in refrigerator for approx. 1 hour, or until fully chilled. Store soup in an airtight container for 3-5 days).
