Monday Morning Muffins
What a week… I know it’s only Monday but man the last few days have not been my best. It can be so hard to pull yourself out of a funk and man oh man was I in one! I wish I could say that I’m all better now, but some things truly just take time. Humans can be pretty darn unpleasant BUT lucky for me, I happen to know some great ones who helped pull me out of my mood and stay on the up and up.
I also made the conscious decision to not let myself sulk the other day. I couldn’t make it to my usual morning workout and I hate, let me repeat, HATE working out at the end of the day. I know enough about myself to know that if I wait until the end of the day, after a long day at work, I will find an excuse to skip my workout so for me going in the morning is the best option and then I end up feeling like a warrior-princess the rest of the day, so that’s pretty cool too.
So, when I realized I couldn’t make my morning workout, and just coming off of a rest day two days prior, I decided to book a post-work session at Orangetheory. Well, classic me, the end of the day rolled around and I started thinking of all the reasons I shouldn’t go to the gym and giving myself permission to skip out. I also got some crappy news at the end of the day that made me want to go crawl into sweatpants and watch The Real Housewives. But I also know that warrior-princess feeling I get each morning is not exclusive to the morning and I would feel the same way if I just sucked it up and went to my class. So, I had a quick internal pep-talk and drove myself to the gym. I am SO GLAD I did.
I was able to release all of that bad energy I had been holding onto and realized how badass it feels to push yourself to new limits and truly put your needs first. It’s one hour out of my day where I don’t have to answer to anyone else (ok , maybe my trainers, but still), and my only focus is ME. I left class feeling like I was on top of the world, which was a total 180 degree turn from how I felt driving over.
Now that a new week is beginning, I am trying to constantly remind myself how I felt during that workout - powerful, fearless and in control.
To kick off my Monday, I had one of these "Monday Morning Muffins" and not only was it delicious and filling, it was still super moist from the day before! You can make these ahead of time and store them for a couple of days which just makes Monday easier, hence the name! They are banana-cinnamon flavored, so you really can't go wrong there.
These are almost identical to my Banana Chocolate Almond Butter Burst Muffin’s – just a bit lighter. Be sure to check out that recipe though when you want to indulge a little more.
I highly recommend these for a busy morning, for an in-between meal snack, or a post-workout option.

monday morning muffins recipe
Prep tim: 5 minutes
Cook time: 12 minutes (approximately)
Total Time: 17 minutes, plus 10 minutes to cool
Makes 10 muffins
1 ½ CUPS COCONUT FLOUR
1 ½ CUPS ALMOND FLOUR
1 TEASPOON BAKING SODA
½ TEASPOON SALT
1 tablespoon cinnamon
½ CUP COCONUT SUGAR
2 TABLESPOONS MELTED GHEE
1 MEDIUM OVERRIPE BANANA, MASHED
¼ CUP WATER
In a medium mixing bowl add flour, eggs, sugar, ghee, salt, Cinnamon baking soda, water and whisk together until blended.
Mash banana with a fork, add to mixing bowl and whisk together with other ingredients until blended (Note: lumps are ok! Do not worry about making the mixture completely smooth).
Pour muffin mixture into silicone muffin cups/tray until almost full – do not fill all the way to the top as muffins will rise in the oven.
Bake for approximately 12 minutes until golden brown and cooked all the way through.
Remove muffins from cups and let cool on a cooling rack for 8-10 minutes.
Serve warm and enjoy!
