Woo-hoo it's that time again, Cinco de Mayo! Who doesn't love a day that encourages margaritas, tortilla chips and guacamole? I mean really, it probably doesn't get much better than that! I could eat guacamole for every meal - yes you read that right, FOR every meal, not just WITH every meal. Oh and guys, if you haven't tried Siete Foods grain-free tortilla chips yet, you are missing out! The only problem is they're so addicting it's hard to not eat an entire bag in one sitting. Pro-tip: invite friends to share!
Guacamole is super versatile. You can pair it with a breakfast, you can eat it with carrots or bell peppers as a snack, or you can go full-out and make steak fajitas (hold the tortillas) and throw a big scoop right on top like I did.
This "restaurant-style" guac is my favorite way to enjoy it. It has the crunch, zest and creaminess all in one. The best part is it's SO EASY!

restaurant-style guacamole RECIPE
Prep Time: 5 minutes
Cook Time: 2-3 minutes
Total Time: 7-8 minutes
Makes about 4-6 servings
1 ripe tomato (or approximately 10 baby tomatoes)
1 medium-sized red onion
2 ripe avocados
HANDFUL of cilantro
Pinch of salt
Garlic powder (optional)
Onion powder (optional)
CHOP ONION, TOMATO AND CILANTRO INTO SMALL PIECES
PEEL AVOCADOS AND REMOVE THE PIT
smash avocado IN A MEDIUM-SIZED MIXING BOWL (you can use a fork or if you're really fancy, a mortar and pestle)
CUT THE LIME(s) INTO QUARTERS AND SQUEEZE JUICE INTO THE BOWL UNTIL THERE IS ENOUGH to smoothly mix the avocado
THROW ONIONS AND TOMATOES INTO MIXING BOWL AND STIR UNTIL THEY ARE MIXED INTO THE AVOCADO
sprinkle with salt to taste and mix
if you like a little more spice, add in a pinch of garlic powder, onion powder and paprika
serve in bowl and garnish with cilantro and a lime
