Summer Salad

It has been cold here in Boston and let me tell you Mother Nature, ya girl is not happy about it! We only get a few short months of nice weather so I would like to soak it all up and I’m not about wearing jackets in July. You want to know something weird though? I would so much rather have the weather be hot than cold, but in a controlled climate (like my office or room) I would rather be cold than hot! Crazy how life works out sometimes.

Anywho, the sun is shining again today so I am partying with this summer salad! It’s simple and fresh and makes me forget that it’s almost August - summertime sadness, am I right!?

Summer Salad Recipe

  • Prep Time: 10 minutes

  • Cook Time: n/a

  • Total Time: 10 minutes

  • Makes 4-5 servings


  • 1 large cucumber, cut into half moons

  • 1 medium tomato, diced

  • ½ large purple onion, thinly sliced

  • 1 avocado, diced

  • Salt and pepper to taste

  • 1 lime, juiced

  • 4-5 Mint leaves, chopped thin (optional)


  1. Slice and cut all veggies and chop mint leaves.

  2. For cucumber, slice down the center lengthwise and then cut in half about ¼ inch.

  3. Hot Tip: to thinly slice onion, cut in half, remove the root, place the cut half down, use knife to make thin slices all the way from the bottom to the top cutting as thinly as possible.

  4. Add all ingredients to large mixing bowl then add in fresh lime juice, salt and pepper and toss until all ingredients are mixed.

  5. Garnish with mint (optional), serve chilled and enjoy.
